It’s no secret that I love salmon and I remember the good old days when I used to buy the stuffed ones that Costco sells, pop it in the oven and eat it for breakfast, lunch and dinner until it’s gone.
I still see it at Costco whenever I can drag myself over there but I easily bypass it in favor of a nice piece of plain wild salmon. Don’t get me wrong, it was deliciously satisfying, but aside from the imitation crab meat and breading, I do not have the slightest idea as to what makes it taste pretty damn good. Now that I am making wiser food choices, I am sure it has ingredients that we should not be putting in our bodies.
My own version of stuffed salmon uses fresh and simple ingredients that pack a lot of flavor and can easily be made as a quick weeknight meal.
