Happy 4th of July! Hope everyone had a safe and relaxing holiday hanging out with family and friends.
I decided to do something different to celebrate today instead of our usual burgers and steak. Beautiful fillets of wild sockeye salmon were on sale so it’s Cajun Salmon Kabobs and Brownies for dinner! I LOVE salmon a lot so these kabobs were perfect.
Cube the salmon into 2 x 1 pieces and season it with cajun spices, extra virgin olive oil, hawaiian black salt and freshly ground black pepper. Alternately thread it on wooden skewers with bell peppers and onions before cooking on the grill.
For dessert, I made Paleo Parent’s Brownie recipe from their new book Beyond Bacon – (now available at your local bookstore and Amazon). I didn’t have time to get some pork fat to render lard which the recipe called for so I substituted it with Kerrygold unsalted butter. To make it extra special, I drizzled the top with melted dark chocolate and chopped hazelnuts. It was so good I ended up eating 2 slices before dinner! Lol
